Easy Cornbread Muffins

Cornbread is a classic Mexican food and there are both sweet and savory versions. Savory cornbread is served as an accompaniment to dishes like chili con carne or Mexican casseroles. It might contain cheese, jalapenos, or other savory ingredients. There are regional differences in cornbread and it tends to be made more salty in some areas. There are also steamed cornbread recipes which results in a mushy, pudding-like cornbread. This can be sweet or savory. Sweet cornbread is also very nice and it might contain honey and sugar to sweeten it. Cornbread is very appealing with its wonderful aroma, especially when it is served hot from the oven. How to Make Cornbread Muffins

Ingredients -

1 cup all purpose flour
1 cup yellow cornmeal
2 eggs
1 cup milk
½ cup white sugar
1 tablespoon baking powder
¼ cup honey
½ stick melted butter
1 teaspoon salt

Preparation:

Preheat the oven to 400 degrees F.

Combine the flour, baking powder, cornmeal, salt and sugar in a bowl.

Whisk the eggs with the milk, honey, and butter and pour this mixture into the flour mixture.

Stir to combine.

Put 12 paper muffin cups in a 12 cup muffin tin and spoon the cornbread batter into them.

Bake until golden brown.

This will take about 15 minutes.
