If you do not have a double boiler, you can melt the chocolate in the microwave but make sure you stir it every twenty seconds if you do it that way. This is a very filling mocha mousse so you do not need to give people large amounts of it, especially if they have had a filling dinner just beforehand.
Ingredients -
½ cup very cold heavy cream
2 tablespoons Kahlua
1 ½ oz chopped unsweetened chocolate
2 ½ oz chopped bittersweet chocolate
¼ tablespoon cream of tartar
¼ cup white sugar
2 eggs
⅛ teaspoon salt
2 tablespoons strong espresso
Handful of walnut halves, for garnish
Preparation:
Melt the chocolate in a double boiler over simmering water.
Stir in the espresso and Kahlua.
Mix 3 tablespoons of the sugar with the egg yolks in a bowl until the mixture is thick.
Stir in the melted chocolate mixture.
Beat the egg whites with the salt until they form soft peaks, then beat in the rest of the sugar until the peaks are stiff.
Stir a quarter of the egg white mixture into the chocolate mixture, and then add the rest.
Stir in the cream.
Divide the mousse between 4 serving glasses and chill them for between 2 and 24 hours.
Garnish with the walnut halves and serve.
