Ingredients -
4 eggs
1 can sweetened coconut milk
1 can condensed milk
2 cups white sugar
½ teaspoon lime juice
½ teaspoon water
Preparation:
Preheat the oven to 350 degrees F.
Beat the eggs, and then add the coconut milk and condensed milk.
Leave the mixture to sit while you make the caramel.
Heat the sugar with the lime juice and water in a pan. Stir it until it melts and goes golden brown.
Pour the caramel into a mold and tilt it so the bottom is completely covered.
Pour in the egg mixture.
Sit the mold in a roasting tin and fill it an inch high with boiling water.
Cook for about 40 minutes or until a knife inserted into the center comes out clean.
Let the flan cool to room temperature, and then run a knife around the edge of the flan.
Chill it in the refrigerator for a couple of hours, then invert the flan on to a serving plate and carefully remove the mold.
