Ingredients -
1 box devil's food cake mix, 18 ¼ oz
1 cup semisweet chocolate chips
2 teaspoons ground cinnamon
½ cup powdered sugar
1 stick butter, at room temperature
5 maraschino cherries
3 ½ oz marshmallow fluff
¼ cup unsweetened cocoa powder
1 tube white piping gel
Nonstick cooking spray
Preparation:
Preheat the oven to 350 degrees F.
Coat a pair of 8 x 2 inch round cake pans with the cooking spray, then use wax paper to line the bottoms and spray more cooking spray over that.
Follow the instructions on the package to make up the cake mix.
Add the chocolate chips and cinnamon to it.
Divide the batter between the prepared cake pans and bake the cake, following the directions on the package.
Let the cake layers cool in the pans for 15 minutes, then on a wire rack.
Beat the butter until it is creamy, and then add the cocoa and marshmallow fluff.
Beat in the powdered sugar until the frosting is fluffy. Spread ⅔ of the frosting over a cake layer, and then top it with the second layer.
Pipe the remaining chocolate frosting around the outer edge of the cake, using a piping bag with a rosette tip.
Write "happy birthday" (or "feliz cumpleanos") in white piping gel on the cake.
Decorate it with the maraschino cherries and some sparkers.
