Mexican Chocolate Cake with Cinnamon

Cakes are very popular in Mexico and are eaten at celebrations and also as a treat in the daytime or evening. Chocolate is a Mexican favorite. The following recipe is for a delicious moist cake which tastes great at any time of the day (or night!)

This Mexican chocolate cake recipe is flavored with cinnamon and vanilla, as well as rich, sweet chocolate. Chocolate cake with cinnamon is always popular because the flavors complement one another so well and this cake is certainly no exception. You can serve this cake alone or with a scoop of vanilla ice cream or with some whipped cream on the side. This Mexican cake is a wonderfully indulgent dessert recipe and would make a great finish after a Mexican meal.

Traditional Mexican Chocolate Cake Recipe

Ingredients -

1½ sticks softened butter
1¼ cups sugar
1 ½ teaspoons vanilla
3 eggs
2 teaspoons ground cinnamon
1 cup milk
½ teaspoon salt
1 teaspoon baking soda
6 oz melted chocolate
2 cups flour

Preparation:

Preheat the oven to 350ºF.

Cream the butter and sugar with an electric mixer in a large bowl.

Add the vanilla and eggs and beat.

Add the chocolate.

Sift the dry ingredients and add them gradually to the chocolate mixture, adding the milk slowly too.

Beat well.

Pour the mixture into a greased, 9 by 13 inch pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean.

Place on a wire rack to cool. Frost if desired and serve.

For a variation, you could use white chocolate instead of milk chocolate.
