Sopapilla Cheesecake with a Warm Vanilla Sauce

Mexican Sopapilla Cheesecake Recipe

Ingredients -

2 cans crescent rolls, 8 oz each
1 lb softened cream cheese
½ cup melted butter
½ teaspoon vanilla extract
1 cup white sugar
1 orange, cut into thin slices
½ teaspoon ground cinnamon
8 chocolate candies (optional)
Nonstick spray

For the Vanilla Sauce:

2 teaspoons vanilla extract
4 egg yolks
1 tablespoon butter
⅓ cup sugar
1 cup Half & Half

Preparation:

Preheat the oven to 350 degrees F.

Grease a 13 x 9 inch baking pan with nonstick spray and cover the pan with one package of crescent rolls.

Combine the sugar, cream cheese and ½ teaspoon vanilla extract and spread this over the crescent rolls, then spread the other package of crescent rolls on top.

Brush the melted butter on top, and then sprinkle the cinnamon over the sopaipillas.

Bake for 25 minutes, and then cut the sopapilla into individual servings.

Heat the Half & Half in a saucepan over a moderate heat until it starts to bubble around the edges.

Whisk the egg yolks and cinnamon together then whisk this gradually into the half & half.

Take care that you stir the mixture all the time, so the eggs do not scramble.

Add the vanilla and butter, then pour this sauce over the sopapilla cheesecake and garnish each serving with a slice of orange and a chocolate candy if you want.
