Mexican Vanilla Bean Cheesecake

This creamy, rich, vanilla-flavored cheesecake is not difficult to make and the flavor is amazing. You can add the filling to the crust as soon as it comes out of the oven so you do not have to wait around for things to cool down, making this quite a quick recipe for a baked cheesecake. If you are using white sugar in the crust, you might like to add a few drops of vanilla extract to it. Also, whip the cream for the garnish with a little vanilla too, to intensify the flavor of this vanilla bean cheesecake recipe.

If you do not have a vanilla bean, you can use two teaspoons of vanilla extract in the filling instead. Technically, it will not be a vanilla bean cheesecake if you do that but it will taste nearly the same. Try to use a product with specks of vanilla bean it in, so the vanilla bean cheesecake has the vanilla bean appearance.

Vanilla Bean Cheesecake Recipe

Ingredients -

For the Crust:

1 ½ cups all purpose flour
½ cup softened butter
⅓ cup vanilla sugar or white sugar
¼ teaspoon salt

For the Filling:

1 lb cream cheese, at room temperature
½ cup sugar
1 tablespoon all purpose flour
3 eggs, at room temperature
½ cup light cream or Half & Half

½ vanilla bean

For the Garnish:

Whipped cream
¼ cup powdered sugar
2 packages fresh blackberries
18 white chocolate candies (optional)

Preparation:

Preheat the oven to 350 degrees F.

Grease a 9 x 13 inch baking pan.

Cream the butter and vanilla sugar, then add the flour and salt.

Press this mixture over the base of the prepared pan and bake for 16 minutes.

While the crust bakes, mix the sugar, light cream and cream cheese in a food processor until the mixture is smooth.

Gradually add the eggs, and then scrape the vanilla bean seeds into this mixture.

Add the flour and pulse until the filling is smooth.

Spoon the filling into the hot crust and bake the cheesecake for about 20 minutes or until the filling is set.

Let the cheesecake cool, and then use a cookie cutter to cut rounds.

Alternatively, you can cut it into squares.

Garnish each cheesecake portion with whipped cream and a chocolate candy.

Decorate the serving plates with powdered sugar and blackberries.
