These whole-wheat flour cookies are simple to make and only use a few ingredients. Mexican wheat cookies are one of the most popular Mexican dessert recipes and their whole wheat, oats, and almonds make them heart healthy too. The oats and whole-wheat flour give the cookies a wholesome taste and the vanilla and almonds give them a sweet flavor and crunchy texture.
You can use normal whole-wheat flour for these whole-wheat cookies if you want but white whole-wheat flour makes the cookies lighter. These whole-wheat flour cookies can be enjoyed with a mug of coffee or hot chocolate, as a dessert or simply as a snack at any time of the day.
Ingredients -
1 ⅓ cups rolled oats
1 cup white whole wheat flour
¾ cup chopped almonds
2 teaspoons vanilla extract
1½ cups powdered sugar
1 cup butter
Preparation:
Preheat the oven to 350º F.
Blend the almonds and rolled oats in a food processor until they are finely ground.
Whisk them with the flour in a bowl and set aside.
Beat the butter and ½ cup of the sugar with an electric mixer until fluffy and light.
Add the vanilla and beat until well blended. Next, beat this into the flour mixture to form a dough. Cover and refrigerate for 30 minutes.
Roll the dough into small balls the size of a teaspoon, and place them on un-greased cookie sheets.
Bake until slightly browned.
This should take around 15 minutes.
Remove the cookies from the oven and cool them for 5 minutes.
Sprinkle the rest of the powdered sugar over and cool them on a wire rack.
You can add more powdered sugar when the cookies have cooled if you like.
