Mixed Berry Soup Recipe with Vanilla

This berry soup recipe combines various berries with apple juice, red wine, vanilla and more, for a light, refreshing, and truly delicious Mexican dessert. You can garnish it with yogurt or sour cream, or simply decorate it with the fresh mint leaves. Chilled Berry Soup Recipe with Red Wine

Ingredients -

1 cup apple juice
1 tablespoon lemon juice
1 teaspoon lemon zest
3 tablespoons dry red wine
½ cup raspberries
½ cup blueberries
1 pint strawberries
¼ teaspoon vanilla extract
1 tablespoon white sugar
Fresh mint, to garnish

Preparation:

Marinate the raspberries and blueberries for an hour in the red wine.

Pulse all but 4 of the strawberries in a blender until smooth.

Add the sugar, lemon juice, lemon zest, vanilla extract, and apple juice.

Cool and refrigerate for 2 hours. Cut the 4 reserved strawberries in half.

Stir the marinated berries into the strawberry mixture and ladle the chilled soup into 4 bowls, garnishing with the reserved strawberries and the mint leaves.
