Mexican Chocolate Souffles

Mexicans know how to indulge their senses and if you are looking for rich chocolate soufflés recipes, look no further than this delightful dessert. Both the ingredients and method for this dish are fairly straightforward but remember not to open the oven before the cooking time is up or your soufflés will rapidly sink!

Mexican chocolate should be used in this recipe since it has a unique type of graininess and subtleness of flavor found in few other types of chocolate. If you want to serve up a really rich dish, you could substitute the whipped cream for chocolate sauce or even serve it with both!

Unique Chocolate Souffle Recipe Mexican Style

Ingredients -

3 oz chopped Mexican chocolate (Ibarra or similar)
8 separated eggs, at room temperature
1 stick unsalted butter
Sweetened whipped cream, to serve

Preparation:

Preheat the oven to 350 degrees F.

Melt the butter with the chocolate in a pan over a low heat.

Keep stirring it until the chocolate melts.

Whisk the egg yolks, and then add them to the chocolate mixture gradually.

Beat the egg whites in another bowl until they are stiff but not dried out.

Fold ¼ of the egg whites into the chocolate mixture, and then add the rest of the egg whites.

Divide the soufflé mixture between greased soufflé dishes.

Put these dishes on a rimmed baking sheet and bake for about 18 minutes or until the tops have risen ½ inch over the dish rims and the centers are set softly.

Serve the soufflés immediately with the whipped cream.
