Mexican Fruit Dessert Tacos

If you enjoy preparing traditional Mexican desserts, you will find these Mexican fruit tacos unusual. Combining fruit with the flavors of cinnamon and jalapeño gives an exciting new taste and the cool vanilla or chocolate ice cream contrasts beautifully. You can use whipped cream if you prefer. Feel free to serve some dulce de leche over these Mexican dessert tacos if you like. Dulce de leche, also known as cajeta, is a Mexican caramel syrup, and is widely used in Mexico to liven up desserts and as an ingredient in other Mexican dessert dishes.

Jalapeño and other chilies feature in a few Mexican dessert dishes and if you have never experimented with chilies in desserts before, or if you are making this Mexican dessert recipe for kids, you might want to add half the amount of jalapeño stated in the recipe. If you want to, you can substitute some fruits for others. You will not need the lemon or lime juice if you are not using bananas. Kiwi fruit, blackberries, blueberries, and peach all go nicely in this Mexican dessert recipe.

Dessert Tacos with Cinnamon and Jalapeño

Ingredients -

1 cup cubed fresh pineapple
1 cup sliced fresh strawberries
1 cup cubed banana
1 tablespoon lemon or lime juice
3 tablespoons sugar
½ teaspoon minced jalapeño
1 tablespoons ground cinnamon
Nonstick cooking spray
6 flour tortillas, 8 inch diameter
Vanilla or chocolate ice cream, to serve

Preparation:

Squirt the lemon or lime juice over the banana to stop it from turning brown, and then combine the fruit with the jalapeño pepper.

Combine the cinnamon and sugar in another bowl.

Spray a tortilla lightly with cooking spray on both sides and heat in a nonstick skillet over a medium heat until golden brown and slightly puffed.

Remove from the heat and dust both sides with the cinnamon sugar.

Shake off the excess and repeat with the rest of the tortillas.

Fold the tortillas in half and fill them with the fruit mixture.

Top with a dollop of ice cream and serve right away.
