You can form this Mexican sweet bread into any shape you like and decorate it however, you like. Ingredients -
2 ¼ cups scalded milk
2 eggs
4 cups plus 2 tablespoons flour
1 ¼ teaspoons salt
⅓ cup sugar
⅓ cup shortening
1 tablespoon yeast
3 egg yolks
1 egg white, beaten
For the Filling:
¼ cup oats
½ cup butter
½ cup flour
¼ cup sliced almonds
1 ½ teaspoon vanilla extract
1 cup white sugar, plus more for sprinkling
Fruit jellies, for decoration
Preparation:
Combine 1 ¼ cups of the scalded milk, the eggs, shortening, 1 teaspoon of the salt and the sugar in a food processor and pulse. Next, add the yeast, pulse again and leave it to stand for a few minutes.
Scald the rest of the milk in the microwave. Add 4 cups of the flour to the eggs mixture and mix it well, then knead the dough for a few minutes.
Cover and let it rise somewhere warm for half an hour.
Mix the filling ingredients together.
Combine the rest of the sugar with the remaining flour and the remaining salt and beat in the egg yolks. Pour the rest of the milk into the mixture and heat it in the microwave for a couple of minutes, whisking it several times until it is thick.
Punch the dough down and divide it into quarters.
Roll each one in to a 12 by 8 inch rectangle and spread the filling across the center. Make a zigzag pattern on the pastry using a sharp knife and shape the pastries into whatever shape you like.
Paint beaten egg white over the top and sprinkle the sugar over them.
Decorate with the fruit jellies.
Preheat the oven to 350 degrees F.
Let the pastries rise for half an hour then bake them for 18 minutes or until golden brown.
Let them cool for 10 minutes, then serve warm.
