Ingredients -
¼ cup water
⅓ cup coconut cream
⅓ cup plus 3 tablespoons white sugar
1 tablespoon gelatin
1 cup drained, crushed pineapple
½ cup plus 3 tablespoons whipped cream
⅓ cup pineapple juice
3 eggs
2 tablespoons plus 2 teaspoons white rum (optional)
4 slices fresh pineapple, to garnish
Preparation:
Sprinkle the gelatin powder over the water in a bowl and stand the bowl in simmering water.
Stir until the gelatin dissolves, and then let the mixture cool down.
Divide the crushed pineapple between 4 serving bowls.
Beat the sugar and egg yolks, and then add the coconut cream, rum and pineapple juice.
Fold in the whipped cream.
Beat the egg whites until you get soft peaks, and then add this to the mousse mixture.
Divide it between the serving bowls and let the mousses set in the refrigerator.
Garnish each one with a slice of fresh pineapple and serve chilled.
