Also known as sweet-sop, sugar apples originated in either South America or the West Indies. The Spanish introduced them to Mexico. The following recipe is refreshingly sweet after a spicy Mexican meal! This sugar apple sorbet is one of the easiest Mexican dessert recipes to make, using only three ingredients.
The finished dessert is light and flavorsome. Sorbet comes in many different flavors, such as orange, lemon or raspberry and the crisp, slightly tart flavor of apple sorbet cleanses the palate and makes a great dessert when you don't want to serve anything too heavy.
Ingredients -
5 medium sugar apples, halved
2½ oz white sugar
Lime rind to garnish
Preparation:
Place the sugar in a pan with 1 and a half cups of water. Bring it to the boil, stirring to melt the sugar. Reduce the heat and simmer for 10 minutes until you have a thin syrup. Set aside to cool.
Scoop out the flesh from the sugar apples and press it through a sieve to remove any seeds.
Place the sugar syrup and sugar apple flesh in a food processor and blend until smooth. Pour this mixture into a freezer container and freeze for a couple of hours.
Remove from the freezer and mash with a fork.
Refreeze until firm.
Serve scoops of the sugar apple sorbet in small bowls, garnished with lime rind.
