Mexican Wedding Dessert

Mexicans certainly have a sweet tooth and love desserts. This wedding dessert is no exception with its rich flavors and interesting textures. This dessert appears quite elaborate, since it is made in four layers but it is actually very quick and easy to make.

It is a bit like a cheesecake in that it has a crunchy base and different textured layers but is also uniquely Mexican. This dessert is too good just to be made for weddings. It makes an extra special dessert whenever you are in the mood for something delicious! It is easier to mix in the cream cheese if you allow it to reach room temperature before adding it.

Uniquely Mexican Wedding Dessert Recipe

Ingredients -

3 cups Cool Whip
2 small packages French vanilla pudding mix
4 oz cream cheese
1 ½ cups chopped nuts
1 ½ cups flour
1 cup powdered sugar
1 ½ sticks butter

Preparation:

Preheat the oven to 350 degrees F.

Melt the butter in a 13 x 9 inch pan.

Add 1 cup of the nuts and all the flour and press the mixture over the base of the pan.

Bake it for 20 minutes then cool it for an hour. Combine the cream cheese with the powdered sugar.

Add half the Cool Whip and spread this mixture over the cooled layer in the pan.

Make up the French vanilla pudding following the instructions on the box and spread this over the top of the cream cheese layer.

Top with the remaining Cool Whip and sprinkle the chopped nuts over the top.
